Historical 1982 Old Vines

In 1982, at Tenuta MonteOliveto in Vesime, someone planted Dolcetto with the patience of those who know that time is the only true ingredient.

Those vines are still here today. More than 40 years of deep roots sinking into the clay soils of the Asti Langhe, searching for minerals, balance, and memory.

Old vines do not produce massive quantities of grapes. But what they give is rich in history, concentration, and character—something young vines cannot even imagine.

Il Calimero is born here: from deep roots capable of regulating the natural balance of Dolcetto, even when you decide to challenge the rules of tradition.

We challenged the rules

Appellation regulations and local habits state that Dolcetto d'Asti must be entirely destemmed, that aging requires oak, and that the color must be intense violet-blue.

We chose a completely different path.

We vinified with 100% whole clusters, without destemming. The intact bunches entered the tanks initiating a pure intracellular fermentation, inspired by the great Pinot Noirs of Burgundy.

The Result in the Glass

  • Pale and bright ruby color: the stems absorb part of the anthocyanins, giving a lighter, extremely elegant robe.
  • Complex aromatic profile: vertical notes of dried rose, black pepper, menthol, and fine spices, reaching far beyond the classic sour cherry.
  • Vibrant and fresh palate: the stems release noble, reactive, and sharp tannins.
  • Irresistible drinkability (Glou-Glou): an alcohol perception lightened by a native freshness that immediately invites the next sip.

To preserve the purity of the crunchy fruit, we used stainless steel only, zero oak. Il Calimero is a natural wine, unfiltered and unfined, with a minimal micro-dose of sulfur added exclusively at bottling.

Robiola di Roccaverano + Hand-cut Fassona Beef Tartare

The vibrant acidity and goat-milk soul of the Robiola di Roccaverano create a perfect contrast with the wine's flow. The vertical tannin extracted from the whole cluster cleanses the palate from the creaminess of the cheese and the succulence of the raw beef, melting seamlessly with the black pepper nuances and wild notes in the glass.

Beyond trends, deep into tradition

There is a Dolcetto d'Asti that grew tired of the usual clichés.

It was born from old vines, planted in 1982, deep-rooted in the history of Tenuta MonteOliveto. But the real revolution happens in the cellar: we vinified it with 100% whole clusters, stealing the secret from the great masters of Burgundy.

No destemming. Intact grape bunches entered the tanks to start a pure intracellular fermentation. The result? A pale and luminous ruby color, a nose reflecting dried rose and black pepper, and a vibrant, vertical, fresh sip.

Crafted entirely in stainless steel tanks to safeguard the crunchy fruit profile, and bottled with just a micro-dose of sulfur at the very end.

Don't call it a traditional Dolcetto. Il Calimero is a natural wine, offering an extreme and irresistible drinkability, born to be served chilled at 12°C, perhaps alongside a genuine Robiola di Roccaverano.
